Cooking Steps
In a separate bowl mix freshly ground black pepper, onion powder, garlic powder, cayenne pepper, smoked paprika and 1 1/2 tsp. kosher salt.
Rub the chicken with the prepared mixture on all sides and place it on a baking sheet.
In a small saucepan mix 1 cup, 2 Tbsp. soy sauce, 1 Tbsp. brown sugar, 1 Tbsp. ketchup, 1 Tbsp. Worcestershire sauce and 1/2 Tbsp. salt.
Cook the sauce over medium heat, stirring occasionally, until thickened, about 5 minutes. Remove from heat.
Preheat grill for 5 minutes or heat a grill pan over medium-high heat and brush the grates with oil. Fry for another 4-5 minutes.
Transfer the cooked chicken to a platter and let cool slightly. Sprinkle with chopped herbs before serving.
