Add the halved sausages and cook, turning once, until lightly browned and heated through, about 4 minutes. Close the press and cook for a total of 2 minutes. Set aside on a plate.

Cut the baguettes lengthwise and place the bread cut side up on the work surface. Spread one half of each baguette with mustard and the other half with ketchup. Sprinkle each half with cheese on top.

Place the sausages evenly over the cheese on the bottom slice of baguette.

Place finely chopped onion and pickled cucumber seasoning on the sausages, sprinkle with poppy seeds.

Press or grill the sandwiches, flipping one time, until the outside is golden and the cheese is melted, about 5 minutes.
