Rice and bean rolls that can be frozen
Cooking Steps
Pour water into a saucepan and add rice, bring to a boil. Reduce heat to low and cook for another 35-40 minutes. Remove from heat and cool.
Rinse black and pinto beans in a colander and place in a large bowl.
Add corn, diced tomatoes, cooled rice and shredded pepper Jack cheese.
Divide mixture evenly among tortillas and roll up.
Wrap portions individually in plastic wrap, transfer to a large freezer bag, and freeze. Reheat in the microwave when ready to serve.
