Distribute the minced meat evenly over each tortilla.

Melt the butter in a frying pan over medium heat.

Beat 5 large eggs with 1 tablespoon of water and add to the pan.

Season with salt and pepper and cook, stirring, until toasted.

Heat a skillet over medium-high heat and prepare the tortillas. Place the tortillas meat side down. Cook, without turning, until golden brown (about 4 minutes). Flip and cook for up to 1 minute more.
Step 6
Fold tacos in half and top each evenly with scrambled eggs, shredded Cheddar cheese, sliced avocado, and sliced green onions.
