Ingredients:

For the Crust:

– 1 1/2 cups graham cracker crumbs

– 1/4 cup granulated sugar

– 1/2 cup unsalted butter, melted

– 4 (8-ounce) packages cream cheese, softened

– 1 1/4 cups granulated sugar

– 1 teaspoon vanilla extract

– 4 large eggs

– 2/3 cup sour cream

– 2/3 cup heavy cream

Instructions:

1. Preheat the Oven:

– Preheat your oven to 325°F (160°C).

2. Prepare the Crust:

– In a mixing bowl, combine the graham cracker crumbs, 1/4 cup of granulated sugar, and melted butter. Mix until the crumbs are evenly coated.

– Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust. Use the bottom of a glass to help press it down evenly.

– Place the pan in the refrigerator while you prepare the filling.

3. Make the Cheesecake Filling:

– In a large mixing bowl, beat the softened cream cheese until it’s smooth and creamy, about 2-3 minutes.

– Gradually add 1 1/4 cups of granulated sugar and vanilla extract, and continue to beat until well combined.

– Finally, add the sour cream and heavy cream and mix until the batter is smooth.

– Place the springform pan in a larger roasting pan and add hot water to the roasting pan until it reaches about halfway up the sides of the springform pan. This helps prevent the cheesecake from cracking.

– Bake in the preheated oven for about 45-55 minutes, or until the edges are set, and the center is slightly jiggly.

– Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour.

5. Chill the Cheesecake:

– Remove the cheesecake from the oven and refrigerate it for at least 4 hours or overnight to set completely.

– Once the cheesecake is thoroughly chilled and set, carefully remove it from the springform pan.
