Cooking Steps
In a pot over medium-low heat, melt butter.
Add the chopped onion and cook until fragrant and softened, 5 minutes.
Add the minced garlic and cook until fragrant, 1 minute more.
Add diced tomatoes, wine and freshly chopped parsley and stir until combined.
Season with kosher salt and freshly ground black pepper.

Add mussels and simmer until all shells are open, 7-8 minutes.
Garnish with more parsley and serve with grilled bread.
