Step 1
In a small bowl, whisk extra-virgin olive oil, red wine vinegar, and 1/2 tsp. kosher salt.
Step 2
Add cubed watermelon, chopped cucumber, crumbled feta, coarsely chopped mint, and thinly sliced red onion and toss to coat in dressing.
Step 3
Before serving, garnish the salad with mint.
