Cooking Steps
Make widthwise slits in the chicken breasts, being careful not to cut all the way through the chicken.
Season the chicken with kosher salt and freshly ground black pepper.
Line a large baking sheet with foil. Place chicken on prepared baking sheet and preheat oven to 400°.
In a medium bowl, combine softened cream cheese, drained and squeezed spinach, artichokes, and ½ cup of shredded mozzarella.
Add kosher salt, freshly ground black pepper and a pinch of red pepper flakes.
Fill every other slot of the chicken with the cream cheese mixture and fill the remaining slots with a piece of bacon.
Sprinkle remaining 1/2 cup shredded mozzarella on top and drizzle with oil.
Bake until chicken is cooked through and bacon is crisp, 35 minutes.
