Cooking Steps
Add the noodles to the boiling water and cook until softened, about 2 minutes. Drain and set aside.
In a small bowl, whisk soy sauce, sesame oil, rice vinegar, black pepper, granulated sugar, and oyster sauce.
Heat a wok over high heat and add vegetable oil.
Add thinly sliced cabbage, large celery stalks sliced at an angle, and diced white onion. Cook, stirring frequently, until slightly softened and wilted, about 3 minutes.
Add minced garlic and grated fresh ginger and cook until fragrant, about 1 minute.
Add the cooked noodles and mix with tongs until smooth.
Give sauce a quick whisk and add to wok. Toss until combined and noodles are completely coated in sauce.
