Coronation Quiche Recipe

Ingredients:

For the Pastry:

– 250g plain flour

– 125g cold butter, cubed

– 1 pinch of salt

– 1 egg, lightly beaten

– 2-3 tbsp cold water

– 200ml double cream

– 200ml milk

– 4 large eggs

– 200g mature cheddar cheese, grated

– 100g cooked spinach, chopped and well-drained

– 100g cooked ham or bacon, chopped (optional)

– 1 bunch of fresh herbs (parsley, chives, thyme), chopped

– Salt and pepper to taste

Instructions:

1. Prepare the Pastry:

– In a large bowl, mix the flour and salt. Add the cold butter cubes and rub in with your fingertips until the mixture resembles breadcrumbs.

– Add the beaten egg and 2-3 tablespoons of cold water, and mix until the dough comes together. Form a ball, wrap it in cling film, and chill in the fridge for at least 30 minutes.

2. Roll Out the Pastry:

– Preheat the oven to 190°C (375°F). On a lightly floured surface, roll out the chilled pastry to fit a 23cm (9-inch) quiche tin. Press the pastry into the tin, trimming any excess. Prick the base with a fork.

– Line the pastry case with baking parchment and fill with baking beans or rice. Bake in the preheated oven for 15 minutes. Remove the parchment and beans, and bake for another 10 minutes until the pastry is golden and crisp. Reduce the oven temperature to 180°C (350°F).

– In a large bowl, whisk together the cream, milk, and eggs until well combined. Stir in the grated cheese, chopped spinach, ham or bacon (if using), and fresh herbs. Season with salt and pepper.

5. Assemble and Bake:

– Pour the filling into the baked pastry case. Carefully transfer the quiche to the oven and bake for 30-35 minutes, or until the filling is set and the top is golden brown.

6. Cool and Serve:

– Allow the quiche to cool slightly before slicing and serving. Enjoy warm or at room temperature.
